Dairy Free Mac & Cheese

Nom Nom Nom is what I did tonight for dinner.

This was the first time I had to throw something together for dinner on the fly.  I had no recipe prepared and didn’t even know what I had in my fridge.  Luckily I have a surplus of noodles and a variety of cheese so I decided to try my hand at making an easy Mac & Cheese.  I literally googled “Cheese Sauce” and used the first recipe that came up for a cheddar cheese sauce base recipe.  I already had all of the ingredients I would need to make this recipe allergen friendly so I got to work.

For this recipe I used a wheat flour, coconut milk, Soy Kaas Block Cheddar Cheese, Earth Balance Buttery Sticks and Herbamare.

Now, I’ve tried a few different types vegan and lactose free Mac & Cheese meals that honestly tasted worse than anything I’ve ever tried.  This recipe ended up having a light cheese flavor despite doubling the amount of cheese.  I decided to add garlic salt for flavor and that gave it the extra “kick” it needed :)   Feel free to edit this recipe to your taste & allergies, but for no dairy/cheese this was a simple and delicious recipe.

NOTE: I used regular barrilla elbow noodles and cooked those according to the package.

Dairy Free Mac & Cheese

 

DAIRY FREE CHEESE SAUCE

Prep Time:  5 minutes

Cook Time:  10 minutes

INGREDIENTS:

3T Earth Balance Buttery Sticks

3T Whole Wheat Flour

1/2tsp Herbamare (or salt)

1/2tsp pepper

1.5C Coconut Milk

2C Shredded Soy Kaas Block Cheddar

Garlic Salt

Pinch of salt

DIRECTIONS:

Melt butter in a pot, once melted remove from heat and mix in flour, salt and pepper.  Once completely integrated gradually add Milk and stir until mixed.  Place back over low heat and stir constantly until the roux thickens.  Once this is thickened add in your cheese and stir until sauce becomes a smooth mixture.  Season with Garlic and regular salt to taste.  Serve over noodles or vegetables….or nachos.  Definitely noodles or nachos.
